Easter Rocky Road Recipe

Baking is something I really love to do to relax and spend time being creative in the kitchen. As easter is coming up and it’s all about enjoying the sweet treats, I thought I would get baking and make some of my own. So, i’m sharing a super yummy and amazingly chocolately rocky road recipe, which is an easter themed version of the lovely Tanya Burr’s recipe.

What You Need:

– A Saucepan    – A Spatula or Wooden Spoon    – A Glass Bowl    – A Square Tin    – Grease Proof Paper or Tin Foil    – Weighing Scales    – A Rolling Pin            – A Sandwich Bag

For The Rocky Road:

-150g Butter    -350g Dark Chocolate     -4 Tablespoons of Golden Syrup    -250g Plain Digestives

For The Topping:

-100g of Mini Marshmellows     -90g of Mini Eggs    -50g of Melted Dark Chocolate    -3 Cream Eggs    -Small Bronze Honeycomb Decorations


1.Line a square tin with grease proof paper and measure out all of your ingredients.

2. Melt the butter, chocolate and golden syrup together in a bowl, over a saucepan of boiling water on a low heat.

3. Put the digestives into a sandwich bag and bash them with a rolling pin until there is a mix of crumbs and pieces of biscuit left over.

4. Pour the biscuits into the chocolate mixture and stir in the mini marshmellows.

5. Pour the mixture into the tin and make sure it’s completley even.

6. Cut the cream eggs in half and position across the top of the rocky road, as well as the mini eggs and any other chocolately decorations you want to add.

7. Melt the 50g of chocolate in a bowl above a saucepan of boiling water on a low heat, and then use a teaspoon to drizzle the chocolate on top of the rocky road.

8. Put the rocky road into the fridge for at least 2 hours, however leaving it over night is also a really good idea.

15 Things To Do This Summer

As we’re well and truly into the summer season and the summer holidays are literally just around the corner, I thought I would share 15 ideas, of what you can do to occupy some of your time this summer.

1.Build a den | It’s something that we all loved doing when we were children and now it’s time to re-create those childhood memories, but with a bit of a twist. I recommend getting plenty of Pinterest-friendly cushions and throws, a few sets of fairly lights and of course a laptop and a good film, to whittle the day away.

2. Have a road trip | Everyone loves a good road trip, and they’re even better on those long, hot summer days where you can really have a full day filled with road trip antics. Whether you want to make a day of it, or just travel an hour away, from home, the key to a good road trip is a killer playlist that you can listen to throughout the whole journey, some of your favourite snacks and treats to keep you going, and of course some great company.

3. Host a garden party | Whether you looking to having a chilled out evening reminiscing on old times, with the people you love the most, or choosing to host a pool party and get all your friends over for a good gossip, a garden party is something you need to throw this summer. In England we don’t get much chance to be in the garden and enjoy the weather, so try and make the most of it. Check out THIS post, to see how to plan an amazing party on a budget.

4. Have a lazy day | No summer is complete without at least one lazy day, where you just chill at home and do exactly what you want to do. My favourite things to do on these days is to go makeup free, pick some of my favourite TV Series or films and just chill out in my pyjama’s all day.

5. Create your own cocktail | Summer is all about cocktail’s, and mock-tails of course, so creating or working out what your favourite summer drink is, will ensure that your thirst will always be well quenched. This will also help you create a drinks list for any summer party you may be throwing.

6. Do a D.I.Y Project | Pinterest is absolutely full of d.i.y ideas, and this summer it’s the time to finally choose one. Whether it’s as simple as a little bit of paper craft and creating your own cards/stationary, or a more complex fashion d.i.y, it’s all about having fun and doing something different this summer. 7. Visit a water park | I’m really obsessed with visiting a water park this summer, and just chilling out in the pool with some of my best friends. So, I thought you might be too, and that this summer should be dedicated to having lot’s of water park fun.

8. Go to a festival | Summer is the official festival season, and there’s one out there to suit everyone. The key to festivals is being super prepared, being ready to ruff it for a few days, and most of all to have an amazing time with friends/family.

9. Bake something | You really can’t underestimate the power of a good baking session, and how much fun it can actually be. It can keep you entertained for hours, and all you need is one of your favourite recipes, a kitchen and a bit of amazing company. Check out my Food Pinterest board, for lot’s of lovely foodie ideas.

10. Learn something new | You always have so much time on your hands during the summer, and it’s the perfect time to learn a new skill. You could decide to learn how to play an instrument, how to nail a new makeup trend or even just a new way to style up one of your favourite wardrobe items; it’s up to you.

11. Go to a new exercise class | There’s so many different exercise classes out there, and summer is the time for you to try out a new one. Whether it’s Zumba, Yoga, Pilates, or a new dance class, just take the plunge and do something different. You never know, you may fall in love with it.

12. Go to an outdoor cinema night | These evenings seem to be super popular at the minute, and I’m really loving their old fashioned Grease Vibes. The best way to enjoy them is with great company, a good picnic and plenty of blankets and throws to keep you warm, during the evening.

13. Explore a new place | Whether that’s in this country or abroad, it’s all about experiencing a new place full of different culture, traditions, food and quirky little shops and villages. Travelling and exploring is one of my favourite things to do, and is something you can never get bored of.

14. Start a blog or YouTube channel | As the internet is now becoming full of such talented people, from across the world, it’s a great time to think about joining the fun. Whether it’s beauty, fashion, travel, food, lifestyle, or just general life, that you’re passionate about; then that’s all you need to get started. If you just want a project for the summer, you could just do a travel or summer blog, and only document a small section of your life instead. It’s completely up to you.

15. Spend time with family and friends | I can’t explain how much family and friends mean to me and it’s so important to enjoy their company and make amazing memories with them. At the end of the day, they’re the most important things in life, and you should always treasure them.

Yet Another Year….

Where did 2013 go??

Hello Lovelies

 

As promised here is my 2013 post for you all. It’s definitely going to be a little rambly, very text heavy and hopefully a good read for you all. So I’ll get going and I hope you enjoy it.

 

When I was sitting in my Aunty’s living room on New Years Eve two years ago, I never would never of believed that what happened last year would actually happen to me. I would of thought you were lying. But for good and bad reasons, I’m so glad that they have, because they have truly made me the person I am today, sitting here writing this post for you all.

 

2013 for me has been a year full of life lessons and experiences. It’s a year that has taught me so much about people, life and most of all my self. It’s taught me so much more about my self and some of the habits I have, that I suppose I never really realised before, such as overthinking most things. I knew I did this a bit but 2013 really showed me how much I actually do it, so 2014 for me is going to be a year of just going with the flow and accepting that some things are out of my control. Also, the fact that you can’t please everyone, there will always be someone who is unhappy with you or your actions, the only person you can truly please is yourself.

 

I feel like, compared to this time last year I have matured so much and learnt so many new skills, such as progressing in blogging and how to create great content and great photos, finding my own style that I love and most of all, just staying true to myself. Ultimately, I think that’s the most important thing, because you want people to love you for you are and also you want to truly love yourself, because let’s face it, if you can’t love yourself then how do you expect others to!

 

Throughout the last year I have really developed my love for quotes and finally realised that I’m officially a quote freak! So here’s a few quotes that I have lived by and learnt this last year:

2013 was a true time for meeting new people and experiences. I’ve become a lot closer to many people that I can now call my really good friends and hopefully people that I always treasure and keep contact with. Also I’ve met and spent time with some amazing people and some that I’m so amazed that I have never met before, even though they may live 5 minutes away from my house. The one thing you need to always remember is, having good friends is all you need and always surround yourself with amazing people.

 

Last year brought many good and bad things in the blogging world. My stats in February to August last year were very low compared to the previous year, this really got me down and made me really lose faith in my blog and myself as a blogger, it was really hard and a time I never want to go back to. But the one thing I always remembered through that time was “there has to be a low before a high” and this was completely true. I worked my absolute socks off and from September onwards my stats began to slowly creep up and finally I reached the most views EVER in December last year, with 836 views, 350 new readers and the best time I’ve had with my blog. When I look back on my life over the last few years my blog is the highlight of it all, it really has changed my life and it’s the best decision I have ever made to start one. It makes it possible for me to share my passion with the world whenever I want and it’s somewhere that has no rules or schedules and that is completely mine and I love it. But that’s all thanks to you, every single person out there who has ever clicked on my blog and had a quick read of one of my posts, I know that for you it’s just reading something but for me it shows I’m succeeding in what I’m doing and that people actually want to read about what I have to say. THANKYOU!!

 

2014 brings good and bad things to rachelspick. For me it’s time to say goodbye to an old friend and get rid of and stop doing reviews on red carpet and award shows. I’m not saying that I’m never going to do any again but for now I’m going to give it all a break. I will still leave all the ones I have already done, so you can still come and read them, but for know that stage in rachelspick is over and it offers more of my time and energy to focus on other things.

 

But there is also some great things for rachelspick in 2014. I’m going to be starting YOUTUBE and properly this time, trying to post more regulary and create great content for you all to watch. I’m not saying that I want to become a full on you-tuber in the next year but I want to try and build my channel up more, because the few videos I came back with where a massive success and I want to continue that. Also, I want to add elements of personal style to my blog and share with your more my style and my own personal items of clothing, I can’t wait for that and I think it will be so fun! With that comes more great opportunities. I will be taking part in something called Fashion February, I will be doing a post about it nearer the time, so I won’t spoil it. Also I want to get some guest writers to come and give me some content and give a bit of variety to all of you, I’m on the hunt, so if you’re a blogger and interested please drop me and email at rachelspickblog@gmail.com. Finally I want to share more of my life passions with you and share a bit about beauty, makeup, hair and nail polish, so that should be fun and I hope you all like it when it comes.
